Yam porridge – asaro at home – is Nigerian comfort food at its purest. Soft chunks of yam are simmered in a spiced palm-oil pepper broth with onions and fish until they start to break down and thicken the pot into something rich, creamy and deeply satisfying.
Asaro is the dish Nigerian families cook when they want something warming and unfussy. We peel and cube fresh yam, then simmer it in a base of palm oil, blended peppers, onions and traditional seasoning. As the yam softens it releases starch, thickening the broth naturally into a porridge with no cream or flour needed.
Fish and traditional spices go in toward the end, and the pot is finished with leafy greens for colour and freshness. Every serving comes with a piece of meat – beef, chicken, turkey, goat meat, ponmo or shaki – so it eats as a full meal.
It is filling, gluten-free by nature and exactly the sort of plate that makes sense on a cold Winnipeg evening.
