Abacha, better known as African salad, is a shredded cassava dish that eats cool, rich and tangy all at once. We toss it with a spiced palm-oil dressing, onions and traditional seasoning, then serve it loaded with ponmo and a piece of fried croaker fish.
Abacha starts as cassava that has been cooked, shredded and dried – the same staple that gives us garri and fufu, in a completely different form. Soaked back to life, it turns soft and slightly chewy, ready to soak up dressing.
That dressing is what makes the dish. Palm oil is emulsified with traditional potash-style seasoning until it thickens to a bright orange sauce, then seasoned with ground pepper, onions and crayfish. The abacha is folded through and topped with garden egg leaves or onion rings.
Our full serving comes with pieces of ponmo and a fried croaker fish, making it substantial enough for a meal rather than just a starter.
