Nkwobi is a classic Igbo delicacy and one of the dishes our Nigerian regulars are happiest to find in Winnipeg. Tender pieces of cow foot are cooked until gelatinous, then tossed in a thick, spiced palm-oil sauce and served as a rich small plate meant for sharing.
Nkwobi is built around texture. Cow foot is simmered slowly until the connective tissue turns silky and the meat pulls easily from the bone – the step that separates a proper nkwobi from a rushed one.
The sauce is the second half of the dish: palm oil is worked with traditional seasoning, ground pepper and onions until it thickens into a creamy, deeply savoury coating. The cooked cow foot is folded through so every piece is glossed in it.
We serve it the way it is served in Nigerian palm-wine bars – hot, generously portioned and topped with sliced onions, ready to be shared over a long table.
