Our goat meat pepper soup is a house speciality and the plate regulars order when the weather turns. Tender goat is simmered in a clear, fiery broth built on traditional pepper soup spices – aromatic, restorative and unapologetically hot.
Pepper soup is less a stew than a broth, and its whole character comes from the spice blend. We use traditional Nigerian pepper soup spices – warm, slightly bitter and highly aromatic – along with scotch bonnet, onions and fresh herbs.
The goat meat is simmered on the bone until it is tender and the broth has taken on its full depth. Nothing thickens it: pepper soup is meant to be light, clear and intensely flavoured, which is exactly why Nigerians reach for it when they are cold or under the weather.
It is served hot in a bowl, ready to eat on its own or alongside a side of rice or a piece of swallow.
